Pumpernickel

  • Water: 14 oz. (420 ml)
  • Canolive Oil1: 1/4 cup (60 ml)
  • Molasses: 1/4 cup (60 ml)
  • Bread Flour: 2 2/3 cups (640 ml)
  • Whole Wheat Flour: 1 cup (240 ml)
  • Rye Flour: 2/3 cup (160 ml)
  • Corn Meal: 1/4 cup (60 ml)
  • Gluten Flour: 1/4 cup (60 ml)
  • Carob Powder2: 1/4 cup (60 ml)
  • Powdered Buttermilk: 1/4 cup (60 ml)
  • Caraway Seeds: 1 1/2 Tbs (22.5 ml)
  • Dried Dill Weed: 2 tsp (10 ml)
  • Salt: 1 1/2 tsp (7.5 ml)
  • Yeast: 2 tsp (10 ml)
  • Basic, Wheat Setting on Zojirushi Bread Machine.
  • This bread is good for sandwiches.
  • This recipe yields about a 2 lb. loaf.
